  • 1 and 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1/2 cup canola or vegetable oil
  • 1/2 cup granulated sugar
  • 1/2 cup packed light or dark brown sugar
  • 1 and 1/2 cups canned pumpkin puree
  • 2 large eggs
  • 1/4 cup milk
  • additional flour for topping
  • additional sugar for topping
  • additional unsalted butter for topping
  • additional pumpkin pie spice for topping

Instructions

  1. Preheat the oven to 425°F (218°C) and prepare a muffin pan with nonstick spray or liners.
  2. In a large bowl, whisk together flour, baking soda, cinnamon, pumpkin pie spice, and salt. Set aside.
  3. In another bowl, mix oil, granulated sugar, brown sugar, pumpkin puree, eggs, and milk until well combined. Fold into dry ingredients gently.
  4. Fill muffin liners nearly to the top with batter.
  5. For the crumb topping, mix additional flour, sugars, and pumpkin pie spice in a bowl; then add melted butter until crumbs form. Sprinkle over muffin batter.
  6. Bake muffins at 425°F for 5 minutes; reduce temperature to 350°F (177°C) and bake for an additional 16–17 minutes until a toothpick comes out clean.
  7. Cool slightly before drizzling with icing made from confectioners’ sugar, maple syrup, and milk.
