Ingredients

Scale
  • 2 cups fresh pineapple, diced

  • 1 large cucumber, thinly sliced or diced

  • ¼ red onion, thinly sliced

  • 2 tbsp fresh cilantro or mint, chopped

  • 1 tbsp lime juice (about 1 lime)

  • 1 tsp honey or maple syrup

  • ¼ tsp salt

  • ⅛ tsp black pepper

  • ¼ tsp red chili flakes (optional for a spicy kick)

  • 1 tsp sesame seeds (optional for garnish)

Instructions

Step 1: Prepare the Ingredients

  1. Dice the fresh pineapple into small bite-sized chunks.

  2. Slice the cucumber thinly or dice for a chunkier texture.

  3. Thinly slice red onion for a bit of sharpness and color.

  4. Chop fresh cilantro or mint depending on your preference.

Step 2: Make the Dressing
5. In a small bowl, whisk together lime juice, honey, salt, pepper, and red chili flakes if using.
6. Taste and adjust sweetness or acidity to your liking.

Step 3: Toss the Salad
7. In a large bowl, combine pineapple, cucumber, red onion, and herbs.
8. Pour the dressing over and gently toss everything until evenly coated.

Step 4: Garnish and Serve
9. Sprinkle with sesame seeds if using.
10. Serve immediately or refrigerate for 15-20 minutes to let flavors meld.

Notes

Use Ripe Pineapple – A ripe, sweet pineapple balances the tanginess perfectly.
English Cucumber – Has fewer seeds and thinner skin, ideal for salads.
Chill Before Serving – Enhances the refreshing quality and allows flavors to develop.
Mix Just Before Serving – Prevents the cucumber from becoming soggy.
Add Crunch – Toss in chopped peanuts or cashews for a fun texture.
