Ingredients

Scale
  • 15-ounce can black beans (rinsed and drained)
  • 1 ¼ cups salsa (store-bought or homemade)
  • 1 tablespoon olive oil
  • 4 corn tortillas
  • 1 tablespoon butter (or olive oil)
  • 4 large eggs
  • Salt and pepper
  • 1 large avocado (sliced)
  • Optional: Crumbled cheese and fresh cilantro for garnish

Instructions

  1. In a small skillet or saucepan, combine black beans and ½ cup salsa. Heat until simmering, then reduce heat to low and cook for about 5 minutes, partially mashing the beans.
  2. In a skillet, heat olive oil over medium-high heat. Fry the corn tortillas until lightly browned and crispy on both sides. Keep warm between paper towels.
  3. In a nonstick skillet, melt butter over medium heat. Crack in eggs, cooking until whites are set but yolks remain runny, about 2-3 minutes.
  4. Assemble by placing a tortilla on each plate, topping with the bean mixture, a fried egg, remaining salsa, sliced avocado, and optional garnishes.
