  • 2 cloves garlic, minced

  • 2 medium carrots, diced

  • 2 ribs celery, chopped

  • 3 cups russet potatoes, peeled and diced

  • 3 cups low-sodium chicken broth or beef broth

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp smoked paprika

  • ¼ tsp dried thyme

For the Creamy Cheese Base:

  • 3 tbsp unsalted butter

  • ¼ cup all-purpose flour

  • 2 cups milk (whole or 2%)

  • 1 cup shredded sharp cheddar cheese

  • ½ cup shredded mozzarella or Monterey Jack

  • ½ cup heavy cream

For Garnish (Optional):

  • Fresh chopped parsley or green onions

  • Extra shredded cheese

  • Toasted bun croutons or bread cubes

  • Crumbled beef-style bacon (optional)


Instructions

Step 1: Brown the Meat

  1. In a large pot, heat olive oil over medium heat.

  2. Add ground beef and cook until browned, breaking it into crumbles.

  3. Remove from the pot and set aside. Drain excess fat if needed.

Step 2: Sauté the Vegetables
4. In the same pot, add onion, garlic, carrots, and celery. Cook for 4–5 minutes until softened.
5. Stir in the potatoes, salt, pepper, paprika, and thyme.

Step 3: Simmer the Soup
6. Pour in the broth and bring the mixture to a gentle boil.
7. Reduce heat and simmer uncovered for 12–15 minutes, or until potatoes are tender.
8. Return the browned ground beef to the pot and stir to combine.

Step 4: Make the Cheese Sauce
9. In a separate saucepan, melt butter over medium heat.
10. Whisk in flour and cook for 1–2 minutes to form a smooth paste.
11. Slowly whisk in milk and cook until the sauce begins to thicken (about 3–5 minutes).
12. Stir in shredded cheeses until melted and smooth.
13. Pour cheese sauce into the soup and stir well.

Step 5: Add Cream and Final Touches
14. Stir in the heavy cream and simmer gently for another 5 minutes.
15. Taste and adjust seasonings as needed.

Step 6: Garnish & Serve
16. Ladle into bowls and top with your favorite garnishes: extra cheese, parsley, or croutons.
17. Serve hot with a side of bread or salad.
